I am so excited to share this Cashew Chicken Stir-Fry Recipe with you. It is honestly one of my absolute best dishes to date, and things get even better if you have an air-fryer at home. If you don't already have an air-fryer, this recipe is another reason why you need to get one! Cashew Chicken Stir-Fry is a Thai-Chinese dish that became one of my go-to dishes to order at Thai restaurants here in the US, as it's a menu that I can also share with the kiddos. This dish has now became one of my favorites, and I am certain this Cashew Chicken Stir-Fry Recipe will soon be one of yours too.

I am all about efficiency, if there's a shortcut I will take it! To reduce time and steps in this Cashew Chicken Stir-Fry Recipe, I am using chicken nuggets from Trader Joe's. I thought the best chicken for this Cashew Chicken Stir-Fry Recipe would be the Trader Joe's Mandarin Orange Chicken, but since Mandarin Orange Chicken is very popular and often runs out - I looked for the next best thing. So I would recommend the Mandarin Orange Chicken first, but if it is out of stock, you can use this chicken nuggets. I use this air-fryer to cook the frozen chicken and I highly recommend it for versatility (and visibility) in cooking.

If you prefer to make the fried chicken from scratch, use chicken breast, or chicken thigh. Cut them into smaller pieces, mix in salt and peppers, a little bit of water and mix in wheat flour or Gogi flour. Deep fry the chicken in medium hot oil.
Ingredients:
Shortcut Cashew Chicken Stir-Fry
- 1 bag of Chicken Breast Nuggets or Mandarin Orange Chicken (Popcorn chicken will work too)
(This is about 1 lb or 500 g of meat.) You can also use fried tofu.
- 3 teaspoons of minced garlic
- 1/2 cup of Roasted Cashews (I use this chile & garlic cashews.)

- 3 tablespoons of Thai Thin Soy Sauce
- 3 tablespoons of Thai Oyster Sauce
- 3 tablespoons of Sugar
- 1 tablespoon of Sesame Oil
- 1/2 tablespoon of water
- 3 stems of Spring Onions
- 10 - 15 Dried Chili
- Your choice of mushroom. (I recommend fresh straw mushrooms if you can find them. I used King Oyster mushroom chopped up into bite-size pieces.)
- 3 fresh small chilis of choice. (This time I used 1 serrano chili. You can take out the seeds and the placenta, if you don't want it to be too spicy or skip this altogether.)
No Shortcut Cashew Chicken Stir-Fry
- 500 g of chicken breast or chicken thigh
- a pinch of salt
- a pinch of ground peppers
- a handful of wheat flour or Gogi flour just to cover the chicken for deep-frying
- 1/2 - 1 tablespoon of water to bind the flour
- Oil for deep-frying
Instructions:
0. Make yourself a drink and turn on a #goodvibesonly playlist.
1. Air-fry the frozen chicken based on instructions, adjusted time and temperature according to your air-fryer at home. You can also pick up ready-made popcorn chicken from the grocery store or any fast food eatery. Here, I cut up the chicken nuggets into bite-size pieces for a more evenly distribution of the sauce.
1.1 If you're making your fried chicken pieces from scratch, use chicken breast, or chicken thigh. Cut them into smaller pieces, mix in salt and peppers, a little bit of water and mix in wheat flour or Gogi flour. Deep fry the chicken in medium hot oil.
2. Air-fry, deep fry or toast the Dried Chili and roasted cashews. You can air-fry them at the same time. If you like it more spicy, feel free to cut up the dried chili into halves. I'm sharing the dish with the kids so I'm keeping the chili seeds in tact.

3. Chop up or press garlic.

4. Cut up the other ingredients.

5. Mix in the sauce ingredients well together into a bowl.
- 3 tablespoons of Thai Thin Soy Sauce
- 3 tablespoons of Thai Oyster Sauce
- 3 tablespoons of sugar
- 1 tablespoon of Sesame Oil
This step is necessary since it will be easy to toss the sauce in later for a quick flavoring/ glazing so that the ingredients remain crunchy and extra delish.
6. Fry the garlic first to add in the fantastic taste and aroma before we put in the rest of the ingredients.

7. On high heat, put in the mushrooms first. Cook it up for a few minutes, then put in the roasted cashews.

8. Add in the fried chicken pieces soon after. Toss and mix well.

9. Add in the sauce ingredients from step 5. Quickly toss the sauce around for even distribution.
Add a teaspoon of water if the pan is too dry. The chicken and cashew pieces should look glazed like this from the sauce mix.

10. Quickly add in the roasted Dried Chili, fresh chilis, and spring onions and toss the ingredients together on high heat. Turn off the heat. Serve with rice and get ready to enjoy one of the best meals of your life. Bon Appetit.
